Pineapple Upside~Down Cake.

Yes, I am so very bad. Truth is, I have NO idea as to why I am SO happy making deserts today. I got a new cake pan the other day, that may have something to do with it. Anyway, here's another special treat for ya'.

Topping....
1/3c. butter
1/2c. brown sugar, firmly packed
1 pineapple, sliced and cored
maraschino cherries (enough to fill the core holes in the pineapple slices)
pecans, halved (same ammount as the cherries)
1/2tsp. vanilla

Cake Batter....
2 eggs
2/3c. sugar
6Tbs pineapple juice from fruit
1c. self rising flour

First, prepare the pan: melt 1/3c. butter in heavy skillet or baking dish. Sprinkle 1/2c. brown sugar evenly over butter. Arrange drained slices of pineapple over butter-sugar coating, and garnish well with maraschino cherries and pecan halves in the spaces.
Beat eggs until thick and lemon-colored (5 minutes) Gradually beat in sugar; add pineapple juice and vanilla. Sift together flour, baking powder, and salt and beat into mixture all at once.
Pour batter over fruit and nuts. Bake at 350*f(moderate oven) for 45 minutes or until wooden pick thrust into center of cake comes out clean. Immediately turn upside-down on serving plate. Do not remove pan for a few minutes; brown sugar mixture will run down over cake instead of clinging to pan.

Well well, my son (yes I did say son) made this at school this week and we all shared this pud yesterday evening - chilled with some ice-cream. Yummy - the diet starts tomorrow (as usual).

TopGent.....Silly man, don't you know that tomorrow never comes?? By the time we think it's here, puff, it's today again and tomorrow is still a day away. So much for the diet. Anyway, fruit cakes and pies are about the only way the women in my family get any fruit at all....except my mother, who always seems to eat a grapefruit or two mandarin oranges a day. Still, I preffer my vitamins in the bottom of my tea mug.

Mag....Pineapple for the ladies, and cherries for he guys, so everyone will like it.

Bear,
This I have made several times. It is wonderful. I follow all of these steps, but usually use a cake mix to make the cake part. Or instead of self-rising flour, I use cake flour. It taste lighter-only way to describe it. LOL. And you don't have to buy an $8.00 pineapple, canned will do just as well, as the fruit becomes candied in the brown sugar anyway. But this really is good. I had my first bite of this on this earth back when I lived on Hawaii. This food does belong in paradise.

And as to TopGent's comment, my mother used to say, "I'll start my diet tomorrow." But by that time it was the day she was in, so she'd say again, "I'll start my diet tomorrow". Even as a child, I knew that tomorrow never came, lol!

Bear,
Did I tell you that the peppermint tea and rice pudding worked wonders, as I'm alergic to medicines when dehydrated? I'm going downstairs now to make a cup of peppermint tea to make sure it's completely gone. No need for rice pudding now, tee hee!

yummy....I spent a couple of days cycling and sampling the local fares....and found pineapple beer....lots of stuff to do with pineapple...pineapple fried rice with chinese sausages...get the taste of lard.

Doggie....Awww, thanks. And the hug was specatular. Glad the tea and pudding worked for you, it always seems to be the simple things, the things we so often take for granted that really do work wonders. When I was a kid, I used to get a lot of sinus problems, and of course the cough. Whenever I got that cough, I KNEW mom would patch me up with some good old whorehound tea. Yeah, it tastes as good as it's name...Mmm,Mmmm...YUCK!!! Two doses and I was up and ready to go to school just so I wouldn't have to take any more of that horrid tea.

Goann....If you think I got excited over a little cake pan, you should have seen the leaps and backflips I was doing when my wife bought me a marble pestle and mortar. My old, black, wooden set, older than me by at least a year, still serves me well, but it is very worn down. I only use it for mashing fresh herbs now, but MANY are the days when I crushed vitamin suppliment tabs in that thing, and fennel seeds. It's just worn past it's days. But the new set is just AWESOME!!

Wild....As long as you don't drool on the floor, there is always a place for you at the table. And if you do drool....Clean it up!

YangHeMa....Yes, I know just how much pineapple is love, and not just by the Asian community. At just about every buffet dinner I have been to, there is ALWAYS pineapple on the fruit and salad bar. Of course, I am an American Indian, and American Indians eat almost everything dried. I can't swear to anything, but I just know American Indians had to have created probably the earliest trail mixes. A few dried fruits and a few nut, maybe a few bitter herb roots for variety....Yeah, sounds like something I would make for a long journey.
