Going Bananas....Part 1

As you know, bananas are a very important source of minerals and vitamins for many people. Given the fact that they are a fruit, they are much better than a dessert but certainly taste good in desserts too. Hehehe. Lately I have been having trouble getting my potassium, I know because of the amount of leg cramps I've been getting. I've been trying to eat more spinach, but greens don't always agree with delicate tummies. So I had a friend recommend something to help me out. I'm sure you'll enjoy this rich Mexican dessert too.

Chocolate Banana Enpanadas

8 sheets of phyllo pastry cut in half lenght-wise OR about 32 wonton wrappers
Extra virgin olive oil or melted butter (to brush the pastries)
2 ripe bananas, peeled and diced
2tsp. sugar
juice from 1/4 of a lemon
6 to 7 oz. (about 190 grams) chocolate broken into small pieces OR 6 to 7oz. chocolate chips
ground cinnamon and powdered sugar (caster or confectioners) for dusting

Preheat the oven to 375*f. Place the banana, sugar and lemon juice in a bowl, and stir well enough to combine them, add the chocolate pieces and stir a few more times to add them.
Brush the pyhllo pastries with a little oil. Place a couple of teaspoons of the banana mixture on one coner of the pastry then fold into a triangle, keep folding in that pattern until the the pastry is completely wrapped around the filling. (if using wonton wrappers, place the first triangle on another wrapper so that the seam is in the middle of the wrapper beneath it. You will have to wrap the triangles 3 times each so as to use 4 wrappers for each empanada.)
As you complete each empanada,dust them with the powdered sugar and cinnamon, then place them on a baking sheet. Bake them for about 15 minutes or until they ar golden. Remove from the oven and allow to cool for no less than 10 minutes before serving, as they will be VERY hot.

As you can see in the picture, I like to make a few little designs on the pastry before I cook them, even shape the pastry a little too. It's a nice little extra touch. Enjoy!!

Happy New Year!

I like yr recipes but really cant put them into pratice as m lazy. Better share info. for natural food. Btw, do you have Chinese desert recipes? Most of them are of great medicinal and supplemental use.

Brother Wild....Thanks!! I'll have to poke my head around a little and find a recipe for that one. Hehehe. You KNOW I can't resist a good Chinese dumpling.

Swallow.....Chinese desserts, hmmm, I'll have to consult the big book for this one. But you are most correct. Chinese desserts can be most healthy due to the amount of honey and fresh fruits they require. I know several Chinese desserts, in fact, that can relieve the effects of motion sickness, then again they are loaded with ginger which is an ancient sailor's cure for sea sickess. But since you asked, I will look up a few desserts in my tome of gastromic arts (the big cookbook) and see what I can find.
