Chinese Hot Pot...

Very often I hear the words 'hot pot' for Chinese cooking.
My translator always converted the word cook to mean boil.
When I went to China, I got to see why.

Go back a few thousand years and the main way of cooking food was to boil it.
Oh... it's boiled in Modern China too!

Take a large bowl and put a divider in the middle.
One side is plain water and the other side is spicy water.

Slice your meats and vegetables into thin strips and drop your food into the boiling water!

I went to a restaurant that had electric hot-plates in every table.
You select what food you want and they bring the raw food to your table so you can cook it and season it to your own taste!
I lied it so much I returned later in the week for more Hot Pot.

Scorched hair. I know that awful smell !!

I had a girlfriend who wanted to cook with a Mongolian Pot... inside the house!!
It was winter and 50F outside (cold for Miami) so we setup a picnic table on my front porch.

For those who haven't seen a Mongolian Pot, it's a self contained cooker/steamer and you put charcoal in the bottom and the heat comes up the center. There is a trough around the heat source you fill with water.
