We had our first sushi yesterday...

Sure we've eaten sushi together before but yesterday was the first time trying to make it.

Not bad for a first try and I figure we will be sushi experts sometime in January 2015!

Look in the top left corner of the photo. We are using a mat. It's a first try and we need more experience.

I didn't know the name Unagi. Wiki says it's freshwater eel.
I'll have to ask at the Japanese Sushi restaurant.
That's out of my taste range right now!

We did add some cooked whitefish, crumbled and blended with the vegetables.

Another different approach was Caesar dressing made from buttermilk and yogurt unlike the commercial style made from oil.

I'll add some translations...

Japanese
Unagi ( うなぎ )

Chinese
Mányú ( 鳗鱼 )

Okay... we watched a few YouTube videos and gained some great knowledge to the art of 'sushi-ing'

Wrapping the bamboo mat in plastic appears to be standard in every video.
