Chinese Bitter Melon...

My niece recently graduated a college of Asian Medicine and may enroll for the advanced studies in Shanghai China. She was talking to my wife at a Christmas party and got on the subject of vegetables with natural health benefits.

One that interested her was Bitter Melon. She described it's appearance and I said I recall seeing it in the local Asian market.

We were shopping there last week and I bought some for all of us.

My wife prepared some that was sauteed with carrots. It looked okay and without testing a slice, I put a bunch on my plate.

Bitter may not be the correct word... it stuff is horrible tasting! I ran to the refrigerator for some vinaigrette dressing to mask the flavor and continue to choke down the rest.

My wife asked if I wanted more...

first, I would like to THANK YOU for the tips on reducing the bitter flavor!

My mother loved to serve us cucumber and ALWAYS prepared it by slicing first and soaking the cucumber in a very strong solution of salt water. Usually, it was the first thing and soaked while the other foods were prepared. After drained, she would top the slices with olive oil and wine vinegar.
That was her secret so the cucumber didn't give us gas... no one liked to burp the smell of cucumber for 2 hours after a meal !!

Salt is the secret...

I love peanuts but they don't love me. I'm allergic to them.
Also, products cooked in peanut oil have the same results.
