Purple Chinese eggplant... I have a new favorite vegetable. It's the long skinny purple eggplant found in Asian markets. My wife splits and slices them into sections about 2 inches long and prepares a stir fry with mushrooms.

Lily, the eggplant you refer to as Aubergine is what I grew up with. Nearly black purple skin.
